Memorial Day Weekend

Josh and I spent most of Memorial Day weekend at the lake with his family. We got up there Friday night and left Sunday morning. It was so great to relax and spend time with Bella. On Sunday before we headed home we went to a cookout at Hayley's new condo. She is a new homeowner and so excited! Monday we spent the day by the pool here in Atlanta. We decided to drive back so we could enjoy the day off and not be traveling with everyone else. Hope you had a great one!

Taco Salad

Last night I made a yummy taco salad that is generally healthy (460 calories per serving). I got it off kraftrecipes.com.

To make the bowl you get tortillas and lay them on top of rolled up aluminum foil, about a 3 inch ball. Spray with a little cooking spray and bake on 425 for about 5 minutes.

In a skillet brown lean ground beef with some chili powder for seasoning. Once the meat is cooked add 1 can of drained kidney beans and half a cup of salsa. Mix together until it's all heated.

Put lettuce in the bowl, add the meat mixture and you can top it with anything you like. I used shredded cheese, tomato, and sour cream.

It was very yummy and simple to make.

Josh and I had a WONDERFULL weekend! Friday night Josh took me to Riverdance! I know...I'm a nerd, but I've always loved watching it and find it so facinating. Josh heard me scream when I saw the commercial so he surprised me with tickets last weekend! It was at the Fox Theater which is so beautiful!! Saturday I got up and met my friend Heather at David's Bridal for a bridesmaid dress fitting. I'm in Samantha's wedding and we have two dresses to chose from so I needed a 2nd opinion. I have to tell this story though. So we we're sitting at the table where I checked in and filled out my paperwork. Keep in mind this is David's Bridal on a Saturday afternoon so there were tons of women there. The lady took my forms from me and saw what I was in for, then she grabs the microphone and announces ever so loudly " I NEED A NON-BRIDAL ASSOCIATE TO THE FRONT FOR CUSTOMER ASSISTANCE"!! Heather pats me on the back and looks around to people standing around and said "yes, that's right, she is NOT getting married! It was too funny! Couldn't they at least say, I need assistance with a bridesmaid dress?? Anyways, I love the dress I picked, Samantha did a great job picking two very cute dresses to chose from, it actually wasn't an easy decision! When I got back Josh and I laid out by the pool for awhile and enjoyed the beautiful weather! Sunday was another pool day and later we took Dozer to the park! I love weekends like this!!! This next weekend we will be heading to the lake for Memorial Day and we're really looking forward to it!!

Congrats Grad!

My little brother graduated from UT last weekend!!! Josh and I got to take the day off and head home to be there for his big moment. I am so proud of him and his accomplishments. He held a job, made great grades and still found the time to have fun while in college. He is an all around guy and I can't wait for him to move to Atlanta so we can see each other more often. Congrats Jason!!!

I was so glad I got to be there to celebrate with him. It was a wonderful weekend that ended with a great Mother's Day. I will post those pics soon when I get them from Mom.

Our Weekend

Well I didn't take any pictures this past weekend so you'll have to use your imagination. It was a very nice relaxing weekend and much needed since our weekend itinerary is about to pick up. On Friday we ate dinner in and played Mario Kart on Wii all night long. It is so much fun and reminds me of when Jason and I were little, we played it all the time. Saturday was spent being lazy while the storms came through and we ended up going to eat hibachi, which was very good. One thing I miss about living on campus is Hibachi Factory b/c they deliver, YUM! Well I hadn't had any hibachi in a long time so it was worth the energy to get off the couch and go. Sunday was spend lazily hanging out by the pool getting some really uneven sunburn. It was a perfect relaxing weekend that I know I will look back on it in the months to come.

Silly Dozer

Last night I was making MORE Amish bread (yes we are addicted) and when I am cooking/baking Dozer always sits in the kitchen with me right by my feet waiting on me to drop something. Well he had been in there since dinner and Amish bread takes some time to make. I guess he got tired of sitting on the hard floor because he went and got on the couch and was watching me from this position, over the back of the couch. Well it worked, I thought it was so cute that I gave him a lick of the batter (off my finger, not the spoon :).
He can always make me smile!

Last Weekend

Josh and I had another wonderful weekend together. On Friday night we went to eat at Murphy's in VA Highland, it was a cute little restaurant with the walls open to the outdoors. I forgot to take a picture and I'm mad about it but we took this family picture when we got home!

Saturday we went to our neighborhood festival. It was a really great time! We watched the parade and as you will see in the picture it was full of very unique and eclectic people! The festival was huge and we walked past every street vendor. It was a little overwhelming, so much that I didn't buy a thing! Here are some pics from our day!
