Brimer family weekend









This weekend Josh's parents and younger sister Chelsey came to visit. We had a great time going to the IMAX theater on Friday night, being lazy (the boys golfed) on Saturday and going to eat at Real Chow Baby on Saturday night. Thank you Brimer's for a fun weekend, we have to do it again real soon! Love you all!

I LOVE BEV!!!!!!!!!!!!!!!!


Cheesy Chicken Simmer


We really enjoyed this meal, I didn't have to buy much and it didn't take long. Plus I found it on kraft.com and it said it was low calorie. I guess that could be true since you use very little cheese but anyways it was yummy and easy!


Prep Time:10 min
Total Time:30 min
Makes:4 servings


2 tsp. oil
4 small boneless skinless chicken breast halves (1 lb.)
2 cups frozen broccoli florets
1 can (10-3/4 oz.) 98% fat-free reduced-sodium condensed cream of chicken soup
1/4 lb. (4 oz.) VELVEETA Made With 2% Milk Reduced Fat Pasteurized Prepared Cheese Product, cut up
2 cups instant brown rice, prepared as directed on package
HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 min., turning after 3-1/2 min.
ADD broccoli; stir. Stir in soup and VELVEETA until well blended. Reduce heat to medium; simmer 7 min. or until chicken is cooked through (170ºF).
SERVE over the rice.


Notes:

*I used chicken tenders because they cook faster and seasoned them with seasoned salt

*I used white rice because we prefer that

*I did the cheese sauce separate from the chicken and combined them at the end when they were both ready, I just think that makes it easier to stir

*I added a little garlic salt for flavor

Our first snow in ATL!

When I bent down I felt him shivering so we didn't make him stay to try and
get the perfect picture.

This Saturday we were very excited to be able to watch the snow fall for most of the day. This is the first time it has snowed like this since we've lived here. For Josh that was 4 years ago. Dozer absolutely loved it and I hope to post a video of his first snow adventure. He was so cute, eating, pouncing, and chasing snow balls. Unfortunately it was gone as quickly as it came but we were excited while it lasted.

Josh definitely knows the way to my heart! I am not one of those girls who thinks flowers and massages, etc. are too cliche. In fact I love to get them for gifts because I don't buy them for myself. Anyways to celebrate 8 years I received a pink rose bouquet on Wednesday. We just ate dinner at home that night. We fixed one of our favorites recipes, my Granny's Italian Meatloaf, with mashed potatoes and creamed peas, yummy! Then on Thursday I got a bouquet of iris's and red tulips. I called Josh to make sure he had meant to send them to me. Then on Friday I got 2 dozen red roses. Needless to say it was quite the experience getting them home. They were absolutely beautiful!!! Friday night we went to eat at Real Chow Baby! What a great restaurant with a great concept. You get to choose ingredients for your stir fry and you have 75 different options. Then they cook it up and bring it to your table. We had a great time there and were going to go to the IMAX theater but ran out of time so we will be doing that this weekend since we already bought tickets. We had a great time celebrating and I'm looking forward to what big events happen in our 9th year...hint hint Josh! ;)

Prayer Requests

1.) One of my best friends is more than likely going to be laid off. The company she works for is in the real estate industry and obviously not doing well so they are in panic mode and have given her a warning. She just got this job about 5 or 6 months ago and is not looking forward to job hunting again. At the same time she just found out that pre-cancerous cells on her cervix have returned after about 2 years. She is having a minor in office procedure next Wednesday to remove them again but they are going to look into other options since they have returned. Please keep her in your prayers as she has a lot on her plate right now.

2.) Some of you know that Dozer had a seizure almost 2 years ago and yesterday he had another one. Josh is taking him to the vet on Monday for his yearly visit and is going to discuss this with the Dr. We are praying that it is some sort of environmental factor or breed factor and not anything serious like a brain tumor. I'm just really worried since we don't know how many he has actually had as he may be having them during the day and we just aren't aware of them. Please pray for a good outcome and for our financial situation. I can only imagine how expensive testing/treatment can be for something like this and that can be a little scary.

3.) Please pray for the family in my blogroll, Nathan and Tricia. I found their blog through one of my friends and they are in desperate need of prayer. It really is an amazing story told through the husbands eyes and he is a very strong Christian. I would highly recommend you visit their site.

8 Years


Today Josh and I have been together for 8 years. We were seniors in high school and went on a ski trip together with some friends. For silly high school reasons we were not getting along that well on the trip up there but by the time we were coming home the next day we were holding hands and "dating". The rest is history. We have had such a fun time this year, I feel like we have taken so many trips and made many wonderful memories. Thank you so much for everything you do for me Josh. You make my life easier, happier and more fullfilled. I think of everything we have been through in the past 8 years and it only makes me more excited to think about what's in store for us. You are such a blessing in my life and I thank God every day for you! I love you babe!

Lap Dog



Even though Dozer weighs 55lbs I just love when he lays in my lap. He was pretty sleepy last night from the weekend and just walked right on top of me and plopped down like it was nothing. My legs started to go numb and stomach was hurting but he was just too cute to move.

This Wednesday Josh and I will have been together for 8 years!!!!!! I wanted to splurge on him a little bit because he has done so much for me this year and I am so appreciative of the support and love he has given me. I got him a Playstation3 that he has been dying for. I couldn't wait to give it to him so I made him open it last night. I just love giving special gifts to people. He obviously hooked it up right away!

Happy Birthday Mom



This is a little late because I was out of town and didn't get to celebrate until this weekend but my Mom's birthday was New Years Day. We took her to The Melting Pot this weekend to celebrate, we all love that resturant, especially her. It was wonderful of course and we had a great time. I hope you had a wonderful birthday Mom, I'm sorry I wasn't there to celebrate it on the real day! Love you!!

Hole-in-One





On Saturday Josh went golfing with his parents and hit a hole-in-one!!! He called me from the course and was so excited I couldn't understand what he was saying. Believe it or not it was the same hole his Dad hit a hole-in-one on years ago. It didn't bounce or anything just went straight in. It was a Par 3, 118 yards, at Ruggles Ferry! Congrats Josh, that is very exciting!!!

Josh and I went home this weekend to see the Adams family. We had a great time at Dad and Robin's just visiting and eating a great meal. Thank you Robin. I was sick so I didn't get to hold little miss Kiley as much as I wanted but we did get to get a couple of pictures. My favorite was watching her watch Brody play with his toy. I just love her little giggle. We are so excited we finally got to see you all. Hope you had a safe trip home!

New Years-Las Vegas

Every year for the past 5 years we get together with Daniel and Morgan for New Years, sometimes more people. This year we decided to go all out and go to Vegas. We stayed at the Venetian and had a great time. We saw several celebrities, Beyonce, Jay-Z, Will Smith, Jada Pinkett Smith. There were lots of sports figures there but we didn't know all their names. Here are some pics.
